Fruits are the best ingredient for any type of cake
As well as providing flavor, also provide natural sugar, and beneficial properties for our health.
I can not think of a better Thermomix cake recipe to finish the year, than this fruit cake, refreshing, light and with a lot of flavor.
And I love in a desserts!
You can use lots of seasonal fruits and the ones you like the most. I vary the fruits a lot, and I used different ones to combine different flavors.
- 2 Tangerines
- 1 Apple Granny Smith
- 2 Kiwis
- 1/2 mango
- 1 persimmon
- 2 pineapple slices
- 2 Pears
- 1 Peach
- Star anise
- Mint or peppermint
- 1 sheet of puff pastry
- 500 ml. skimmed milk
- 4 egg yolks
- 1 teaspoon vanilla aroma
- 75 gr. sugar
- 40 gr. cornstarsh
Extend the puff pastry in the mold, make some holes in the dough with fork. Bake for 30 minutes at 200ºC, approximately.
While the base is being baked, peel and chop the fruits.
Reserve half peach and some tangerine to decorate.
Place the fruits in a bowl and bathe with orange and lemon juice, toss the star anise and a couple of spearmint or mint leaves. Reserve.
While the puff pastry cools, prepare the pastry cream. Place the butterfly on the blades and pour the milk, egg yolks, sugar, vanilla and cornstarch.
Mix for 20 seconds, at speed 3. Next, set for 9 minutes, at 90ºC and speed 2½. Reserve until it is completely cold.
Finally, fill the baked pastry with the pastry cream, spreading it well, place in the middle half peach, and cover the cake with the rest of the fruits.
Remember that we had the fruits dipped in citrus juice, so before you throw them for the cake, you have to drain the syrup that has been created, saving it for use in any other preparation.
