Fried dough – Carnival Elephant Ears

Carnival Elephant Ears

Recipe – Thermomix TM 31


– 800 grams of wheat flour
– 2 XL eggs
– 165 grams of anise
– 100 grams of cow ghee (you can use butter if you lack up the ghee)
– 200 grams of water
– 1 pinch of salt
– 3 Tbsp of sweetener for dusting
– Light olive oil for frying


Add to the TMX mixing  bowl the ghee and the water and mix it for 10 minutes at 37°C,  speed 1.

Then add the eggs, salt and the anise, and mix for  30 seconds speed 4, once done  add half of the wheat flour and mix it for 20 seconds speed 6.

Set your TMX on dough mode for 2 minutes and add the rest of the flour through the opening in the lid with a spoon. The dough has to be smooth and should come off easily  from the bowl walls. If not add a little more flour.

Remove the dough and wrap it  in a damp cloth, let it rest for 20 minutes.

After the 20 mins, floured an area to work (this will prevent from sticking).  Knead the dough by hand for a few seconds to to take the air away.

Cut the dough into pieces and stretch each one of them  with the roller (also floured), the pieces must be very thin, but they should not break when you took them to fry. While doing it, please prepare a frying pan with plenty of oil, it  has to be very hot.

Fry the ears in the hot oil, then place them on a platter covered with towel paper, to take the excess of grease . Place them onto  another platter. Make sure to brown them while cooking.

Dust them with the sweetener and enjoy! Perfect for breakfasts  !
