How about with fresh, sweet muffins for breakfast???

You can add a little bit of cinnamon ore raisins.


  • 250 g gluten-free flour
  • 50 g butter
  • 10 g fresh yeast
  • 50 g sugar
  • 50 ml milk
  • 50 ml water
  • 1 egg
  • 1 lemon or orange zest


1. Put butter, water, milk, sugar, and orange/lemon peel into the mixing bowl, set for 2 minutes / 37° /speed 2
3. Add yeast and egg, mix for 5 seconds 7speed 4
4. Add flour, set for 2 minutes kneading (closed cup)
5. Place the dough into a bowl and leave it rest for 10 minutes, then place on a baking sheet lined with parchment paper
6. Cut the muffins in the top, brush with beaten egg and sprinkle with a little sugar, leave them rest, until they double the volume
7. Preheat oven to 190°, bake for 15 or 20 minutes, cool and serve
