RICE, BASIC FOOD
Rice is one of the staple foods of many cultures, today’s recipe, with brown rice as main ingredient. Brown rice has a lot of fiber, which makes the rice assimilate more slowly; minerals and vitamins. It is also cooked slower, and with much more water.
You can find many types of brown rice in stores, but I recommend you to use organic brown rice,. In this recipe I´ve used eco-friendly brown rice.
Blueberries are one of the fruits considered to be rejuvenating and disease preventive, due to their great antioxidant richness.
WHITE AND RED QUINOA
Quinoa is one of the most important grains of the Andes, is technically the seed of an herb, although it is considered a grain. It belongs to the family of the quenopodiáceas (like the spinach) but it is compared with the cereals by its composition and its form to eat it. Compared to other whole grains, it is relatively rich in protein, iron and magnesium and its taste is pleasant and smooth texture.
INTEGRAL RICE WITH WHITE AND RED QUINOA, BLUEBERRIES AND ALMONDS
- 300 gr. eco-friendly rice
- ¼ cup chopped or sliced almonds
- ¼ cup dried cranberries
- 50 gr. red quinoa
- 50 gr. white quinoa
- 1 tablespoon butter
- Salt and pepper
- 2 tablespoons of soy
- 800 ml water
Put the oil in the glass and add the chopped garlic, let the oil heat while you cut it into slices. Sauté for 4 minutes, varoma, speed 4.
Add the water and put the basket in its position. Heat the water setting for 7 minutes, Varoma, speed 1. If you see that Varoma temperature reaches quickly, it is because the water is already boiling and you can continue with the recipe.
Put the machine in a weighing function and pour the rice. Cook for 20-25 minutes or the time indicated by the rice package, Varoma, speed 4.
Stir occasionally with the spatula so that the rice is well integrated and soaked. Remember that integral rice needs more cooking time – white rice is cooked in 13 minutes in the Thermomix.
Add salt to taste. Let the rice rest for 10 minutes inside the bowl for a few minutes before serving.
Melt butter and pour over the brown rice, add almonds and cranberries. Add the soy and sauté in the pan for a few minutes.
Serves alone or as an accompaniment.
