LEMON MOUSSE CAKE



 This cake is easy to prepare and sooooo tasty!

 

INGREDIENTS, THERMOMIX TM31:

 

Ground:
1/2 Packet of butter biscuits
70 g butter
a shot of amaretto (or milk)

 

Mousse:
3 Eggs
3 TBSP sugar
250 ml cream
1 Packet gelatin
1/3 Cup lemon juice
grated rind of 1 lemon
Lemon Jelly to decorate

 

PREPARATION:

 

Ground:
1. Put cookies into the mixing bowl, crush for 10 seconds /speed 10
2. Add butter and amaretto/milk,  mix for 4 minutes / 70 ° / speed 3
3. Put the dough into form and leave it in the refrigerator

Mousse:

4. Insert butterfly, put the protein into the mixing bowl beat on speed 3 1/2 /37°,  whip in a bowl and store in the fridge
5. Put cream into the mixing bowl, beat on speed 3 1/2, whip in a bowl and store in the fridge
6. Put egg yolks and sugar into the mixing bowl, beat for 2 minutes / speed 3 1/2
7- Put lemon juice in the microwave and heat, then add the gelatine and dissolve in the juice, add into the mixing bowl and mix for 8 seconds /speed 4
8. Add cream and grated rind of 1 lemon, mix for 5 seconds /speed 4
9. Add beaten egg whites and mix slowly with the spoon
10. Pour mixture into the form and leave it for 4 hours in the refrigerator
11. Cover the cake with Lemon Jelly, leave for 1 hour in the fridge, then serve
