PASTA SALAD WITH PESTO SAUCE (WITH THERMOMIX)



How about a colorful pasta salad with  a delicious Pesot sauce. Of course you can change the ingredients for the salad, according to your taste.

 

INGREDIENTS, THERMOMIX TM31:

 

Salad:
-200 g colorful pasta
-100 g cooked Turkey Breast (cut into cubes)
-8 balls of mozzarella
-1 handful of dried tomatoes
-1 handful black olives
-1 large tomato
-1 onion
-1 handful capers
-1 Romaine lettuce
-some leaves Basil

 

Pesto:
-100 g Parmesan
-50 g basil leaves
-2 cloves of garlic (peeled)
-50 g pine nuts
-250 ml olive oil
-Salt

 

PREPARATION:

 

Salad:
1. Cook pasta as on the packaging indicated, cool down, keep
2. Bake Turkey breast cubes in a pan
3. Wash and chop the salad
4. Put all the ingredients in a bowl and mix

 

Sauce:
5. Put parmesan cheese into the mixing bowl, set 5 x on Turbo and chop, then  grind for 15 seconds /speed 5-7-9
6  Add garlic, pine nuts, salt and basil, grind for 15 seconds /speed 5-7-9
7. Set on speed 5 and add slowly the olive oil, if it is too thick add a little water and mix until a homogeneous sauce is the result a
8. Mix the sauce with the salad and serve
