PRAWNS AND ASPARAGUS RISOTTO
Thermomix is perfect for preparing risotto! I try to make it once a week, and I’m trying different ingredients, this type of Italian rice has a different preparation than the Spanish, but in the end we get a creamy and delicious rice, similar to the rice we make here, but with a very different flavor due to its basic ingredients such as parmesan cheese and wine, which give it an impressive flavor!
- 250gr of prawns
- 50gr olive oil
- 1000gr of water
- A bunch of wild asparagus
- 50gr of onion
- 320gr of arborio rice or carnarolli special risotto
- 100gr dry white wine
- Salt and pepper
- 50gr of butter
- 50gr grated Parmesan cheese
For the fumet
Peel the prawns, and place them in the bowl the heads and husks, 20gr of oil and fry for 5′, at 120°C, speed 1.
Add the water and set for 20′, 100°C, speed 1, strain and reserve.
Clean the bowl and place 30gr of oil and the onion, shred for 3″ / speed 5. And fry for 5′, 120°C, speed 1.
Add the rice and set for 3′, 120°C, turn to the left, spoon speed.
Add the wine and set for 1′, Varoma, Turn left, spoon speed, without lid
Add the asparagus, 750gr of fumet and salt. Set for 13′, 100°C, turn to the left / speed spoon.
Add the butter, and the shrimp tails, set for 1′, 100°C, turn left / speed spoon.
Place the risotto in a dish, and sprinkle with grated parmesan cheese and serve immediately!
You can leave the fumet made in advance and thus reduce the cooking time, I usually have it frozen, we can also add different vegetables, adjusting the amount of liquid depending on the vegetable we use. It is a must to use a specific rice arborio, or carnarolli, to make the risotto if we want to obtain good results.
